Zucchini Lasagna





This is so delicious you don’t even realize that there aren’t any carbs in them! This lasagna is layered with sausage, veggies, ricotta, and all other kinds of goodness.


What you need:

1 1/2 zucchini’s per layer (I did 3 Layers, so 5 zucchinis)

1 package of your choice of meat, I did spicy sausage for the flavor, but ground turkey would be good as well

1 can of tomato sauce

Ricotta Cheese

Mascarpone

1 cup of parmesan cheese

1 cup of mushrooms sliced

1 whole yellow onion chopped

1 cup of broccoli cut into small pieces

3 cloves of garlic minced

Salt and Pepper

Italian Seasoning

Optional: Red Pepper Flakes


Directions:

Preheat oven to 350 Degrees

In a skillet on the stove, sauté onion with minced garlic and olive oil

Once onion has begin to reduce add mushrooms and broccoli cooking for about 3 more minutes stirring regularly

Set vegetables aside and sauté your meat, and once meat is cooked combine vegetables and meat all together and set aside

In a baking dish, put a little bit of tomato sauce on the very bottom

Thinly Slice Zucchinis, and begin to place one layer of zucchini on the very bottom

With a spoon, take a small spoonful of mascarpone and spread over zucchini, then layer a generous spoonful of ricotta cheese on top - salt and pepper and add a little bit of Italian seasoning

Do a layer of 1/2 the meat and veggies and spread around evenly

Do another layer of zucchini, mascarpone, ricotta and meat on top of the first layer

Finally, top with a final layer of zucchini and mascarpone, and use all the rest of the ricotta on the top layer

Add all of the tomato sauce to the top and spread around evenly topping with parmesan cheese, and seasonings

Bake for 30 Minutes and broil on high for the final 5 minutes

Serve and enjoy!
