I love having Salmon at the end of a weekend as a healthy refresh after a weekend of being out and about, and to start off the week on a good foot forward. This salmon has a burst of flavor and is only a few steps, so it is super easy.
What you need:
Two Salmon Filets
1 cup of Very Yeri Teriyaki Sauce
2 cups of broccoli
1 red onion sliced
1 clove of minced garlic
1 teaspoon of salt and pepper
Fresh lemon juice
1 tablespoon of sesame seeds
Directions:
Place salmon in a bag and pour teriyaki sauce over salmon and let marinate for at least an hour
Cut broccoli into smaller pieces, and lay on a baking sheet with sliced onion as well and minced garlic
Preheat oven to 400 degrees
Lay salmon face down so the skin is up on a baking sheet
Pour extra marinade over the vegetables and place on the top rack and cook for 20 minutes
After the vegetables have been cooking for ten minutes, put salmon on the bottom rack and cook for ten minutes allow the salmon to sear face down
Top salmon with fresh lemon juice and sesame seeds and serve over a bed of rice with vegetables
Serve and enjoy!
