This recipe was super simple and I came up with it on the go the other night. If you add a protein it would be great as a whole meal, or its perfect as a side!
What you need:
1 jar of sun-dried tomatoes, drained
3 cups of spinach
1 package of goat cheese
1/2 cup of parmesan
1/2 cup of half and half
Salt and pepper
2 cloves of garlic, minced
1 shallot diced
Desired Pasta - cooked
Directions: Place a skillet on the stove top an heat to medium heat
Drizzle a little bit of olive oil into the pan and cook garlic and shallots for five minutes stirring regularly
Add goat cheese and sun-dried tomatoes and continue to mix until goat cheese has softened and is beginning to become more of a paste
Add spinach, pasta, parmesan, and half and half to the skillet
Continue to mix until spinach has broken down and all the ingredients are evenly mixed
Salt and pepper to taste!
Serve and enjoy
