You can't go wrong with a caprese salad. Whether you serve it as an appetizer, a side for dinner, a delicious lunch the options are endless.
What you need:
1 tub of Fresh Mozzarella (I use Galbani's mozzarella in the water)
2 table spoons of olive oil
1 1/2 table spoons of balsamic glaze
1 teaspoon of salt
1/2 teaspoon of cracked pepper
1 1/2 cups of cherry tomatoes
1 1/2 cups of basil leaves or sub as a salad using mixed greens instead
Directions:
Slice the mozzarella into evenly thing slices, and begin to place them down on your serving plate
cut the cherry tomatoes in half and pair with the slices of mozzarella
lay a piece of basil on each piece of mozzarella, unless you have decided to use the mixed greens instead, if so, lay your mozzarella and tomatoes on top of your mixed greens
drizzle olive oil and balsamic oil evenly across the salad, and top with salt and pepper
Serve and enjoy!
