Ever have those nights where you have no desire to cook? I had one of those last night, so I made my simple bolognese and it was just the comfort food last night called for!
What you need:
1 lb of ground pork
2 large orange carrots
1 yellow onion
2 cloves of garlic (minced)
1 cup of mushrooms
1 teaspoon of pepper
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 tablespoon of Italian seasoning
1 small jar of tomato paste
1 can of tomato sauce
1/2 a cup of red wine
Parmesan and basil optional toppings
Directions:
Dice onion, and carrots into very small slivers
In a Dutch oven style pot, or skillet, on medium heat sauté onion, and carrot with olive oil for about five minutes
Add a table spoon of water to caramelize the onions, and then add more olive oil, and the minced garlic cooking for about two minutes
Dice the mushrooms and add, cooking for about 1 minute
Add the ground pork and using a spatula as the pork cooks, break it down so it is in very small pieces
Add the seasonings and mix evenly
Add the tomato paste, and mix evenly until all veggies and pork are are coated in the paste
Add the red wine and bring to a low allowing to simmer for at least 5 minutes to cook out the alcohol
Finally, add your tomato sauce, and allow to simmer on low all together for 15 minutes prior to serving
Top with basil and parmesan and pour over desired starch or vegetable, or just enjoy plain!
