This is a staple in our household. You can make it in the slow cooker or on the stove top. Both are great and super easy!
What you need:
1/2 cup of low sodium soy sauce
2 teaspoons of light brown sugar
2 teaspoon sesame oil
1 tablespoon of crushed red pepper flakes (optional for spice)
1 table spoon of grated ginger (optional)
1 tablespoon of hoisin sauce
1 pound of ground beef or ground turkey
1/2 a pound of spicy pork sausage (optional as well, I’ve made it with just beef and no pork but like the pork as an added bonus)
1 chopped yellow onion
1 1/2 cups of chopped mushrooms
2 tablespoons of minced garlic
1 cucumber chopped
1 egg per person
1 tablespoon of GoChuJang sauce (i use the miso kind from Whole Foods or Safeway)
1/2 table spoon of sesame seeds (or more)
Directions:
This one is best in a slow cooker, its super easy, but also great on the stove too.
Combine soy sauce, brown sugar, chili flakes, shredded ginger, sesame oil, hoisin, in a cup for marinade
Simmer your onion if you have an insta pot for the simmer mode. Add garlic, if on stove cook onions and garlic until translucent on the stove top
Combine meat, marinade and gochujang sauce in slow cooker. Stir and cook on slow for 4-6 hours, if on stove top cook until meat is cooked through, and then add marinade and cover and let simmer
Serve over a bed of brown rice (or cauli rice)
Boil water and once water is boiled begin to make a circular motion so water is going in a circle, add egg and lightly stir so the egg poaches (about 2 1/2 minutes)
Top with sesame seeds & more gochujang sauce if desired - caution the gochujang can be on the spicy side so add accordingly!! I also roast broccoli and add it to the bowl as well!
This one makes the whole house smell like heaven when you come home!!! Total prep time: 15 min & then let the slow cooker do the rest
