Cast Iron Rosemary Seared Lamb Chops


We LOVE lamb. I wish it could be a staple in our house but it’s a little bit on the pricier side. I make it for special occasions or when we feel like treating ourselves.


What you need:

Rack of lamb (TJs has the best prices)

3 tablespoons of Italian Seasoning

2 strands of rosemary

4 tablespoons of olive oil

1 tablespoon of Garlic salt

1 tablespoon of cracked pepper


Directions:

Cut the rack of lamb in between the bones into Lamb chops

Pour one table spoon of olive oil evenly over each side of the chops

Spread the Italian seasoning on side of the chops, flip and spread the rest of the seasoning

Do the same with garlic salt & cracked pepper

In a skillet use remaining olive oil, and lay rosemary down.

Once skillet is hot place lamb chops on to cook

Cook 2.5 minutes each side, covering for the middle two minutes- and then pull and let rest for 5 minutes

Salt and pepper before serving


Serve and enjoy!
