Caprese Kale Pesto Pasta with Optional Sweet Chicken Apple Sausage


Craving pasta but also wanting something on the lighter side? This recipe is light, delicious, and unique! I got the pesto recipe from my cousin Tina, and have been obsessed ever since. This is such a simple one and only takes 15 minutes total

What you need:

Pesto sauce - 1 cup of olive oil, 1/2 cup of Parmesan cheese, 1 clove of garlic, 2 cups of basil, 1 cup of spinach, 2 cups of kale, 3 tablespoons of pine nuts, salt and pepper to taste.

1 box of whole wheat angel hair pasta

1 box of cherry tomatoes

4 Trader Joe’s sweet Chicken apple sausages

Fresh mozzarella or burrata

Balsamic glaze topping optional

Directions:

Combine all of the ingredients for the sauce in a blender and blend until at desired consistency. Set aside.

Cut cherry tomatoes in half and roast in the oven for 10 minutes at 400 degrees

Set sausage on the same pan as tomatoes and cook in the oven at the same time

Dice up mozzarella into small cubes or if using burrata cut ball in half for portions

Combine pasta and the pesto sauce until evenly distributed.

Serve with tomatoes and mozzarella on top, and top with balsamic glaze

Add a side of chicken apple sausage and enjoy!
