Capon Dore




Its been a minute over here! Some fun life updates - my husband and I recently bought our first home, and it is an adorable little fixer upper in the town I grew up in. All that being said, things have been crazy over here with the move and then projects! Also, lulubee’s recipes has been catering and LOVING it! All that being said - here is an all time favorite recipe of mine. This delicious chicken is packed with flavor and is too easy for how good and wow worthy it is!

What you need:

For the chicken

3 chicken breasts

2 teaspoons of salt

1 teaspoon of pepper

1 teaspoon of chili flakes

1 cup of flour

½ cup of parmesan cheese

2 teaspoons of garlic powder

6 tablespoons of olive oil

2 table spoons of salted butter

For the sauce:

2 cups of chardonnay wine

6 cloves of garlic minced

1 shallot finely chopped

2 cups of chicken broth

4 tablespoons of lemon juice

2 cups of sliced mushrooms

¼ cup of fresh parsley or basil

4 tablespoons of butter

2 tablespoons of flour


Directions:

Combine the flour, parmesan cheese, garlic powder, chili flakes, salt and pepper

Cut each chicken breast in half to make thinner slices - then place the chicken in a plastic bag and then tenderize the chicken to make it about a ¼ of an inch thick

Place the chicken in the flour mixture coating each side

Add olive oil to pan on medium heat and cook chicken on each side for about 3 minutes until each side is golden brown and then set aside

In the same pan add half of the wine, all of the shallots and garlic and allow to simmer until the wine has evaporated and shallots and garlic have been browned

Scrape the pan and add the rest of the wine, chicken broth, lemon juice, mushrooms and cover and allow to simmer

Add the flour and mix evenly into the sauce helping it to thicken

Finally add the butter and the chicken and cover and allow to simmer for five minutes spooning the sauce over the chicken

Recommend serving over risotto, fettuccine alfredo, or with desired veggies! Honestly it goes great with anything.
