I love breakfast burritos, they would probably be my go to for breakfast every day if I could have them! These are easy, and I make a big batch to have extras for busy days throughout the week!
What you need:
Flour tortillas (large)
3 table spoons of salsa verde (per burrito)
2 strips of bacon (per burrito)
1/4 of an onion (per burrito)
2 breakfast sausages (per burrito)
1/4 cup of mozzarella cheese grated (per burrito)
1/2 of a jalapeño (per burrito)
1/2 cup of home style breakfast potatoes (per burrito)
2 eggs (per burrito)
3 table spoons of ketchup
1/4 of an avocado per burrito
Directions:
Cut bacon and onion into small pieces and in a skillet cook together until caramelized and crispy. Set aside.
In another skillet add 3 table spoons of olive oil and let heat - add potatoes flipping every 5 minutes - add ketchup once potatoes begin to crisp
Combine all ingredients in skillet and add whisked eggs over the top with cheese & jalapeños & salsa
Allow to cook until eggs are no longer runny - set aside
Lay tortilla on heated skillet for 30 seconds each side and then combine ingredients.
Roll into a burrito & let outsides crisp
Serve and enjoy! We eat this with salsa and ketchup as our sauces! I recommend one burrito per two people as a half of one is plenty!
