We love chicken parmesan in our house! But sometimes, the labor of love it takes to create chicken parmesan dissuades me from crafting it up in the kitchen. Chicken tender version is easier, quicker, and topping with burrata instead of parmesan is a special flare!
What you need:
1 package of chicken tender cutlets (can do breasts or thighs, but breast tenders are always packaged and easy to use!)
1 box of vodka sauce
1 box of burrata
1/2 cup of basil
2 cups of bread crumbs
3 eggs
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of cayenne
2 teaspoons of cracked pepper
1 teaspoon of oregano
1 cup of vegetable or canola oil
Directions:
Preheat oven to 350 degrees
In one bowl combine eggs and mix until whipped
In another bowl combine breadcrumbs and seasonings except basil, oregano and one teaspoon of cracked pepper
Dip chicken in egg, coating both sides, and then bread crumbs coating both sides and set aside
Once all chicken has been coating begin preheating a skillet on the stove on medium heat, and add oil
When oil begins to sizzle, lay chicken down in pan flash cooking for a minute and a half on each side
In a baking pan, add a little bit of vodka sauce to the base, and then lay chicken on top
Once chicken is in baking pan evenly distribute the vodka sauce ontop of the chicken, the more the merrier!
Break up the burrata and place onto of the vodka sauce and chicken, and then add the rest of the cracked pepper, basil, and oregano onto of burrata
Cook in the oven for 15 minutes!
It goes great with ravioli, pasta, zucchini noodles, or plain!
