Blackened Salmon with Kale and Brussel Sprout Orzo


This is everything you need in a meal! It is delicious, filling and will leave you feeling healthy and refreshed!


What you need:

Serving for 2

For the Salmon

2 salmon filets

1 teaspoon of cracked pepper

1 teaspoon of salt

1/2 a teaspoon of onion salt

1/2 a teaspoon of garlic powder

1/4 teaspoon of cayenne pepper

1 teaspoon of thyme

1/2 a teaspoon of oregano

1/2 a lemon squeezed, and then lemon wedges for topping

For the Orzo:

2 cups of chopped Kale

1 cup of thinly sliced Brussel sprouts

1 table spoon of olive oil

1 teaspoon of garlic salt

1 teaspoon of lemon pepper

1/2 a teaspoon of balsamic vinegar


Directions:

Take the squeezed lemon juice and pour it over the salmon

Combine all the seasonings for the salmon and rub evenly across the entire salmon, on both sides of the filet

In a sauce pan on high heat, add a drizzle of olive oil and sear the salmon filets for 2 minutes on high on each side, bring heat to medium, cover salmon and cook for an additional 3 minutes until cooked through

Set aside for 2 minutes before serving over the orzo

For the orzo:

Bring a pot with water to boil, and pour 1 cup of orzo into it, cooking until orzo is soft and cooked through

In a skillet, add olive oil and vegetables and sauté on high so you char the kale and Brussel sprouts, and top with seasonings

Combine the orzo, with a little bit more olive oil, and the kale and Brussels, and add balsamic vinegar and toss

Serve with the salmon and enjoy! (Also great by itself o with another dish)

Optional - I add parmesan to the orzo as well
